GLUTEN FREE INFORMATION

I was diagnosed with Celiac Sprue over 41 years ago.  I was one of the first ones diagnosed being sick since birth.  I love to share my experience hoping to help others. Eating gluten free is actually a healthy diet.  Although there is no cure, you can live a healthy life by strictly adhering to the gluten free diet.  NO WHEAT, RYE, BARLEY or REGULAR OATS.   Now you can purchase gluten free oats.  I have listed my favorite foods, products and things I do to enjoy life without gluten.

Applesauce-Homemade - The apples determine the color of your applesauce.  I like the summer variety that ripens in August and Macintosh Apples are good also.

CAKES, CANDIES & BROWNIES:

Flourless Chocolate Cake with Dark Chocolate Glaze

Peanut Clusters - Microwave 1 to 1 1/2 cups dark chocolate chips for 1 1/2 minutes.  Stir, Add 1 tbs. butter and melt for 30 or 40 seconds.  Stir until creamy and add peanuts.  Mix until peanuts are covered with chocolate and drop by spoonful onto a plastic plate.  Refrigerate until set.

PICKLES:
Homemade Sweet Pickles -  Never Fail Recipe and they are the best!

Homemade Dill Pickles that stay crisp all year.  I make dill pickles each summer and dump out the dill pickles that was made the year before.  Buy a mix from the store and follow the directions.  I have used both Mrs. Wages and Ball pickle mix and they work well.  You pick your cucumbers small (about 2" to 3"), wash, put in clean jars, heat the mix, vinegar and water.  Pour over the cucumbers, seal and water bath.  They are really good. 

PROTEIN SHAKES:

 Apple Pie Shake - A delicious breakfast


 Healthy Shakes Snacks- 
I freeze my extra bananas in 1-inch chunks. I freeze strawberries and cherries.  I put 3 frozen banana pieces in a blender, add 6 to 8 pieces of frozen fruit and about 1 inch of milk, water or juice.  Add 2 to 3 pumps of sugar free Torani Syrup. Blend until smooth.
