I learned to can from my mother, grandmother and aunts. We use to go to the local canning kitchen when I was a small child, but when the canning kitchen closed I learned how to can at home. When you stand back and look at your bottles filled with delicious food, you realize how blessed you are to have the food to can.
Our apple tree was loaded and we canned 97 quarts of delicious applesauce this past week end. The cost is minimal for us as we have our jars and so sugar and lids are the only items we had to purchase. The savings was about $250.00.
We also canned 27 quarts of string beans on Friday and froze 21 pints of peas. Yes, a busy week end but so rewarding.
My husband and I have always tried to be as self-sufficient as possible. I am very grateful for a beautiful garden and lots of food to freeze and can.
