Almond Flour and Rice Pie
Crust – A Favorite and easy to make
1/3 cup whole almonds ground to a fine powder in the
blender. There will be small chunks of
almonds but they were not crunchy in the pie.
In a 9 inch pie plate, combine the ground almond flour, ¾
cup brown rice flour, ¼ tsp ground cinnamon and pinch of ground cloves. Mix well with a fork
In a microwave dish, combine 3 Tbsp water, 2 Tbsp oil, &
2 Tbsp honey and heat on low setting until honey liquefies. Drizzle liquid over the flour mixture in the
pie plate and stir with a fork until well blended. Let stand until the dry ingredients absorb
the liquid.
Shape the crust by pressing mixture firmly into place with
your fingers, covering bottom and sides of plate. Pat top edge of crust into a straight
edge. Bake empty crust for 5 minutes at
350 degrees before adding your favorite filling. Makes one crust. Use in place of a graham cracker crust.
